Using a novel proprietary technology based on ultrasound attenuation spectroscopy, Chonova enables in-line monitoring of material structure changes : in chocolate production, our first focus, measuring key parameters like crystalization, volume contraction, and temper-curve profile, which were previously impossible to measure, enables manufacturers to: 1- Reduce processing time 2- Reach a perfect product quality with optimized stability in time.
From a sustainability point of view the benefits are :
- Increased energy efficiency
- Avoided food waste (both during production and during product shelf life)
After launching with chocolate producers, we'll exploit the potential of scale-up in other food categories which embed material structure changes such as extruded plant-based and meat alternatives.
