Creating tangible change towards sustainable hotel practises with Kitro

Description

The Zurich Marriott Hotel, a 5-star property in central Zurich, began partnering with KITRO in 2022 to tackle food waste, a key focus of Marriott’s Serve360 ESG strategy aiming to cut waste by 50% by 2025. With over 40 kitchen staff and 220,000 meals served in 2024, reducing food waste was a major challenge. The hotel installed 5 KITRO devices to monitor waste in real-time, enabling data-driven decisions on SOPs, staff training, and purchasing. This implementation helped benchmark performance and set a model for other Marriott properties across the region.

Impact & Result

By implementing KITRO, the Zurich Marriott Hotel saved 24 tonnes of edible food waste and 54,000 meals annually, significantly reducing CO₂ emissions. Economically, this translated into CHF 140,000 in food cost savings, achieving an 33% reduction in food waste a strong return on investment of 122%. (measurement period of 4 years)

Since we started working with KiTRO,in the first 10-11 months we havereduced food waste by 18% which ismore than positive.
